Nutty Breakfast Bars With A Hint Of Ginger And Tumeric 

This recipe will make 6 portions. Store the bars in an air tight container and they will keep in the fridge for 3-5 days. 

Ingredients:

  • 75g mixed unsalted nuts 
  • 50g mixed seeds 
  • 50g mixed dried fruit 
  • 1/2 tsp ground tumeric 
  • 1/2 tsp cinnamon 
  • 1 tbsp ground ginger 
  • 2 small tangerines 
  • 1 ripe banana 
  • 100g porridge oats 
  • 1 tbsp of honey 

Method:

  1. Preheat the oven to 180 degrees. 
  2. Pulse the nuts, seeds, dried fruit and ground spices to a thick and chunky consistency, and then pour the mix into a bowl. 
  3. Peel the oranges and blitz them in a processor with the banana and honey. 
  4. Pour the orange mix into a measuring jug and top it up with water until it reaches 350ml. 
  5. Pour the orange mix into a saucepan and bring to the boil, then add the porridge oats and nutty mix. Stir until it starts to go sticky and gooey. 
  6. Transfer the mixture to a non stick rectangle tray, and spread it out until it is around 1cm thick. 
  7. Cook in the middle of the oven for around 30 minutes, or until golden brown. Leave to cool in the tray, then transfer to a wire rack. 
  8. Once cold, cut the baked mixture into 12 bars. 
  9. To create the ultimate breakfast, pair two of these delicious bars with a cup of green tea and a small pot of Greek yogurt topped with strawberries and honey.
